Dairy production runs on one protein called Casein.

Casein determines how cheese melts, stretches, and holds structure. It’s the protein behind mozzarella, cheddar, and other dairy products.

For thousands of years, casein has had one source: cows. Cows are not the product. They are the system used to produce the protein.
